Opinions differ on sweet honey wine made of sweet chestnut honey (Castanea sativa). Many deny the harsh, almost bitter sweet chestnut-honey, some love it. The same with the honey wine: many won’t drink it, to some it is the crowning achievement of honey wine making. Analytical facts are normal (12,5 % vol alcohol, 65 g/l residual sugar), but nothing else. For the sweet chestnut honey wine we recommend a long storage.
