On the sunny slopes in the north of the Thau pond, Merlot and Cabernet-Sauvignon vines bloom on the scrubland typical on red soils made of clay and limestone colluvia. After discarding the stalk, the colour and tannins are extracted in an optimal way through what they call “thermovinification” (process of heating the grapes). Fermentation is maintained at a steady 16°C in order to enhance fruity aromas.

This is a crimson wine, which boasts cerise, shiny shades. Small-berry flavours ranging from blackcurrant to wild strawberry come out intensely, along with light floral hints. This is a medium-bodied, harmonious wine, which combines Merlot’s roundness with Cabernet’ structure, in which the fruit is really honoured. A delightful wine! |
