Maceration prior to cold fermentation. Alcohol fermentation, short period in vats, drawing, pressing, malolactic fermentation, maturation in vats.

Tasting notes:

Dark ruby red colour. Potent bouquet of fresh ripe dark fruit like blackberry and blackcurrant, blending subtly with notes of wood and coffee bean. A lively attack of fresh dark fruit with notes of blackcurrant leaf, followed by structured tannins that support the flavour. Long lingering finish.

Keeping:

Can be drunk now but will mature well for 2 to 3 years.
