Mezcal, 40%vol

San Cosme Mezcal is a White or Young (Joven) Mezcal made from 100% the Agave variety Angustifolia Haw, also known as Espadín. It comes from Santiago Matatlán, Tlacolula, Oaxaca.

The piñas (heart of the agave plant) are baked in rock ovens (large, 8–12 ft diameter / 6 ft deep, rock-lined conical pits in the ground), and then mashed with a large stone wheel attached to a post pulled around by horse, donkey or mule.

The mashed product is placed in large wooden vats to ferment for two days. The fermentation is then heated in a cooper pot. San cosme is twice distilled, so that 40% alcohol volume is maintained. San Cosme have double distillation, taking out the heads and tails.

 

 

Colour:

Bright, crystalline, unctuously caressing the glass of the mezcal, reflecting the great body of San Cosme Mezcal.

Nose:

A fresh scent of cooked agave, with a strong hint of alcohol and an underlying scent of raw agave. Some hints of caramel, wood and earth.

Taste:

San Cosme feels like it gently coats the mouth, and has a flavor of smoky agave mixed with leather.

Finish:

Warm pleasant finish.

 

 

 

 

The agave plant has been a part of Mexican history for a long time, since the Aztecs started using it to produce aguamiel or pulque in 250 AD. With the introduction of the distillation process, it became possible to make Mezcal, which, in the Nahuatl language, means “heart of the agave plant”.

To be certified as Mezcal, it has to be made with agave plants. Agave is recognized by the NOM 070 mexican law, which recognizes eighteen types of the plant. By denomination, it needs to be from the states of Oaxaca, Guerrero, Durango or Tamaulipas. However, mezcal is mainly produced in the state of Oaxaca.
Mezcal is usually of artisan production, so it is produced in small batches.
