If kirsch is the oldest of the fruit eaux de vie, eau de vie made from the Williams pear is the most recent but now the most widely known. Its aroma is particularly fine and delicate, although of course, the bouquet fades a little over time, so it should not be kept for too long. The fruit must be harvested at perfect ripeness, golden from the sun, tantalisingly mouth-watering in the favoured regions of the Rhone Valley, Anjou and the southwest.
It takes 28 kg of pears to produce one litre of eau de vie. Its fragile nature requires that the fruit is harvested and transported with great care.
