The best Muscadets are vinificated „sur lie“. This means they are left on the yeast for a long time, before they are bottled directly from there. That gives a bit of creamyness and a little natural carbon dioxide to the wine. The wine growers of Muscadet in Loire developed an unique type of wine this way. This wine is the perfect companion of high-class fish and seafood.
